The famous chickpea chocolate mousse, with no chickpea taste

  • 120g aquafaba (liquid from a can of chickpeas)

  • 120g dark chocolate (70% cocoa)

  • 60g sugar

  • A pinch of coarse salt

      Optional: Reduce the aquafaba by simmering it for a thicker mousse

      Melt the chocolate

      Whip the aquafaba (with sugar) until stiff peaks form

      Gently fold the melted chocolate into the whipped aquafaba

      Add a pinch of salt

      Étape 6

      Refrigerate for at least 4 hours before serving
