Creamy and delicious cashew-based cheesecake

Base

  • 250g cashews (soaked for 3h)

  • 2 lemons

  • 60g glucose syrup (honey flavor)

  • 60g agave syrup

  • 120g coconut oil

Crust

  • 125g speculos

  • 40g coconut oil

      Mix speculoos and melted coconut oil to form the crust

      Press into a mold and set aside

      Blend soaked cashews, lemon juice, syrups, and coconut oil until smooth

      Pour the mixture over the crust

      Refrigerate for at least 2 hours
